The other day I made some italian-style spaghetti squash (really light, just spaghetti squash tossed with olive oil and then onion & zucchini & tomato mixed in) and had two leftover tomatoes (Cory's not big on tomatoes so I used half of what the recipe called for in the squash). I didn't want to waste them, so I'm having a snack of tomatoes with a dash of salt, a teensy bit of mayo, a sprinkle of parmesan cheese and basil. Yum. The only way it'd be better is if the basil was fresh and the tomatoes were actually ripe. Silly grocery stores. But still, yum.
