Potato Salad Recipe?

I've never made potato salad before. (I know, shocking!) I need to make some tomorrow night though, for a work BBQ on Friday. Does anyone have any tried-and-true recipes that they'd like to share? I'll be checking around online as well but sometimes the best recipes are ones you don't find that often on the internet.

OMG YES, i have the best recipe evarrrrr

cut medium red potatoes to bite sized pieces (2-3 potatoes per person)
boil them in salty water until done
drain them and then sprinkle champagne (or any white) vinegar all over them (a nice coating, but not swimming in it). You want them to be nice and zingy
Add lots of chopped fresh dill, salt & pepper if needed
let them cool and put them in the fridge overnight to soak up the vinegar

(amounts are for like... i dunno, let's say 12 medium potatoes.. just keep tasting and adding.)
sliced black olives (1 can)
chopped up hard boiled eggs (6)
chopped up red onion (1/2 large)
chopped up celery (2 ribs)
dijon mustard & mayo (1 c. mayo, 1/4 c. mustard)
more salt and pepper if needed

i have to give credit for this salad to my best friend wendy who is a chef. i like to add my own personal spin and add like 4 strips of crushed up bacon.

sorry to be writing you like 20 times but maybe i would add like less mayo initially. i decided that it was not medically ethical for me to recommend consumption of 1 cup of mayo.

just kidding, i just don't want it to get too mayo-ey
