CSA Week 14

CSA Week 14


This week's veggies:
Cilantro
Cherry Tomatoes
Lettuce
Corn
Watermelon
Bell Pepper
Carrots
Tomatoes
Zucchini
Eggplant
Onion
Summer Squash
Potatoes
Garlic
Leeks

It's a good week, except for the cilantro! Cory's tired of roasted veggies, though, so now I have to actually be creative in the kitchen. I'm thinking some kind of pasta with sauteed veggies and a vinaigrette might be nice. We shall see what mood strikes me.

That little round zucchini-lookin' thing is SO cute.

You could always chop and freeze the veggies for soups and stews later.

Personally, though, I think you should make some carrot cake and zucchini bread. Maybe some pico de gallo!

I made carrot-zucchini bread the other day - it was good but by the end of it I didn't want to see it anymore. :D Maybe it's because I made the healthiest recipe I could find. Heh.

I made pico too, a week or two ago! Cory doesn't like it so I made myself sick of it pretty quick since I needed to eat it before it went bad.

I may just freeze the veggies, though. That sounds like a good idea. I wonder how well carrots freeze. I still have rhubarb from the spring in there, that I need to make into something!

I think that they freeze okay but thaw out a bit mushy - I throw them into spaghetti sauce and stews/soups.

I grew both purple carrots and orange ones this year. I am going to try to dehydrate them in my food dehydrator and see if that works :) My freezer space is filled with tomatoes right now ....
